In addition to eating sustainably (live in a a city - find an urban/community garden in your neighborhood!), use cloth napkins at the dinner table instead of paper (I even take one in my lunch bag with me everyday). Give each household member their own unique napkin ring, and then everyone can use their napkins a couple of times (unless they make a really big mess) before washing them (and drying them on your clothes line). Plus, cloth napkins make your table setup look classy!
